The perfect summer salad…

Caesar salads get a bad rap for being unhealthy but there’s nothing bad about my healthy home-made version:
– Romaine lettuce;
– Anchovies (Omega 3, vitamins A & B, calcium, magnesium, iron);
– Grilled asparagus (fibre, folate, vitamins A, C, E, K, & chromium, a trace mineral that enhances the ability of insulin to transport glucose from the bloodstream into cells);
– Pomodoro tomatoes;
– Red onions (antioxidants & compounds shown to promote cardiovascular health, prevent & treat cancer, reduce high blood pressure);
– Capers.

Dressed with a mix of:
– 0% Greek yoghurt (high in protein & probiotics);
– Olive oil;
– Lemon juice (antibacterial, antiviral & immune-boosting);
– Garlic;
– Parmesan (protein & calcium);
– Salt and pepper.

Lots of vitamins, minerals, healthy fats and essential nutrients. Perfect for a light summer meal.
